印度美食辣味煎饼 Spicy Indian pancake

  这道印度辣味煎饼来自Gordon Ramsay的食谱。印度菜里对香料的使用种类之多和使用方法之繁复都是惊人的,比较常见的香料包括芥末籽、小茴香、咖喱叶、姜黄、小豆蔻等等。对于烹饪者来说,要同时驾驭如此多的味道是困难的,而多数印度菜色又要求多种香料的混合而形成其独特的味道,未能提供太多化繁为简的学习机会。这次这道辣味煎饼是相对简单的一道食谱,除了几味要单独购买的香料外,基本可以在普通的中式家庭厨房里实践,因此作为佛诞日的一款素食特别推荐给大家。

  This Indian spicy pancake is from Gordon Ramsay's recipe. Indian food often surprises us with the amount of different spices used and the level of complexity in using the spices. Common spices include mustard seed, cumin, curry leaves, turmeric, cardamom, etc. It is definitely a challenge to harness so many different spices, unfortunately there usually isn't an easy way out as most Indian dishes require many spices to work together to achieve the right flavor. This spicy pancake recipe uses only a few spices, and the cooking can be achieved in everyday kitchen, thus a good vegetarian recommendation for Buddha's Birthday.

  原料 / Ingredients

  薄饼Pancake

  孜然: 1-2茶勺

  Cumin seeds: 1-2 teaspoons

  绿色辣椒: 一根

  Green chili: one

  蒜:2瓣

  Garlic cloves: 2

  姜:1个约3厘米长

  Ginger: one 75px piece

  鸡蛋:一个

  Egg: one large

  全脂牛奶: 275毫升

  Whole milk: 275ml

  油: 1-2汤匙

  Oil: 1-2 soup spoon

  盐和胡椒

  Sea salt and freshly ground pepper

  煎饼填充物Forthe spiced potato filling

  橄榄油

  Olive oil for frying

  芥末籽: 1-2茶匙

  Mustard seeds: 1 tea spoon

  洋葱:一个

  Onion: one

  姜黄: 一茶匙

  Ground turmeric: 1 tea spoon

  土豆:两个

  Potatoes: 2

  准备工作

  揉搓辣椒以方便去籽,去籽后切碎;

  将蒜、姜分别切碎;洋葱切成细丝;土豆切块后在盐水中煮熟。

  Prep work

  Role the chilli between hands to make it easier to take out the seeds, chopped afterwards.

  Chop the garlic, ginger, onion. Roughly chop and parboil the potatoes.

  第一步

  在不加油的平底锅上,中小火烘烤小茴香(孜然),加少许盐以加快烘烤速度。待孜然颜色变深香味烘出后,倒入少许油并煸炒辣椒、姜和蒜,略微变色后盛出置入一个大碗内。

  Step 1

  Toast your cumin on the pan without oil, add salt to speed up the process. When cumin takes on color, add some oil to fry chilli, ginger and garlic. Once taking color, set aside in a large bowl.

  第二步

  另起一油锅,油热后加入芥末籽,变色后加入洋葱煸炒,并加入姜黄。待洋葱炒软后,加入切成小片的熟土豆,加盐和胡椒调味。此为煎饼的夹心,置于一旁待用。

  Step 2

  In another hot pan, add olive oil and mustard seeds. Once mustard seeds take on color, add onion and a tea spoon of turmeric. After onion is soften, add the sliced potatoes, then season with salt and pepper. Set aside and this will be the pancake filling.

  第三步

  在之前煸炒过的辣椒等调味料中,加入面粉和一个鸡蛋,并加入盐和胡椒调味(和中餐的煎饼不同,印度的煎饼本身就经过调味)。之后一点点的加入牛奶并同时搅拌,我们希望达到的是较稀的面糊,最后加入少许葡萄籽油(做任何煎饼的重点就是面糊中加入油,可以确保煎饼的色泽,西餐甜品的煎饼中加入融化的黄油同理)。

  Step 3

  Add flour and an egg into the chilli and spices fried earlier in Step 1, well season with salt and pepper (unless Chinese pancake, Indian pancakes are well seasoned). Add a bit milk at a time to make the thin batter, lastly add a bit of oil into the batter (key to make crispy pancake is to add oil into the batter, same as adding melted butter into pastry pancake mix).

  第四步

  起一平底锅,加少许油,将搅拌均匀的面糊盛入并摆动锅以将面糊摊平。文火煎熟,直至边缘变色再翻面,之后盛出。

  Step 4

  In a large pan, add a little bit oil, then stir and add a laddle of batter in. Move the pan to spread the batter evenly. Fry until the edge of the pancake takes color, then toss over. Once ready, slide out and set aside.

  食用

  在煎饼中加入土豆洋葱馅儿,之后卷成一卷儿。搭配酸奶食用可缓解辣味。请享用吧!

  Serve

  Add the filling into the pancake and roll. It will be well complimented with yogurt as cooling agent. Enjoy!
